This loaded cauli mash is a fun side dish for all the family.Rich with tangy cheese and salty bacon this is perfect served alongside chicken wings or pork chops.
How to Make It
Step 1
Cut the cauliflower into florets and add to a large pan of water. Bring to a gentle boil then simmer until tender.
Step 2
Whilst the cauliflower is cooking, roughly chop the bacon and add to a pan over a medium heat. Fry the bacon until cooked and crisp.
Step 3
Add the cauliflower to a food processor along with the butter, cream, half of the grated cheddar, garlic, salt and pepper. Blend until you have a smooth mash.
Step 4
Transfer the mash to an oven proof dish and sprinkle over the remaining cheddar.
Step 5
Heat a broiler to high and broil for 5 minutes or until the cheese is golden and bubbling. Scatter over the bacon and chives to serve.
