How to Make It
Step 1
Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking until crisp and golden. Set aside to cool completely.
Step 2
Whilst the bacon cools, thinly slice the lettuce and cabbage and add to a mixing bowl.
Step 3
Add the bacon to the bowl with the cabbage and lettuce.
Step 4
Finely chop the chives and add them to a small mixing bowl with the mayonnaise, lemon juice, salt and pepper. Stir well to combine.
Step 5
Spoon the mayonnaise over the bacon and vegetables and stir well to combine, coating everything in the dressing. Keep refrigerated until ready to serve.
