Heat a tablespoon of olive oil in a saucepan over a low/medium heat. Crush the garlic. Add the garlic to the saucepan and sweat gently for a few minutes until tender and fragrant. Add the cauliflower rice and paprika to the saucepan. Stir well. Cook for 3-4 minutes or until the rice is hot through and tender.
Step 2
Add the tahini, lemon juice, remaining olive oil, salt, and pepper to a small bowl. Whisk to combine until smooth. Taste and adjust seasonings as required.
Step 3
Add the tahini sauce to the pan with the rice. Stir well, coating the rice evenly in the sauce. Finely chop the cilantro and stir through the rice to serve.
