These crispy cod fillets are lightly coated in a lemon and dill mayonnaise and dusted in a seasoned crumb of ground almonds.
The fish is perfect served with an extra helping of mayonnaise and a portion of steamed broccoli or green beans.
How to Make It
Step 1
Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray.
Step 2
Add the ground almonds to a mixing bowl along with the salt and pepper and stir well to combine.
Step 3
In another bowl, add the mayonnaise, lemon zest, garlic powder and dill. Stir well to combine.
Step 4
Coat each cod fillet on both sides in the flavored mayonnaise.
Step 5
Tip the ground almonds out onto a clean work surface and dust each of the fillets in the breading so that they are completely coated.
Step 6
Arrange the breaded fish on the oven tray and bake for 15 – 18 minutes until crisp and golden on the outside and the fish is cooked through.

Cod, Cooked From Fresh – 2 fillet – each 4 ounce raw
Lemon Peel – 2 teaspoon
Mayonnaise – 1-½ tablespoon
