Samgyeopsal (Pork Belly) — Naturally Keto

Thick-cut pork belly grilled directly — no marinade, therefore no sugar. The most naturally keto item on any Korean BBQ menu. Wrap in large lettuce leaves with garlic and a small amount of ssamjang (go easy).

Galbi (Short Ribs) — Adapt the Marinade

Traditional galbi marinade contains pear (sugar), soy sauce, and sugar. Replace: use tamari soy sauce, a small amount of grated Asian pear (or substitute), sesame oil, garlic, and ginger. Zero added sugar.

Bulgogi (Beef) — Adapt the Marinade

Same approach: replace sugar with erythritol or simply omit. The savoury-sesame flavour remains excellent.

Keto Korean Sides (Banchan)

Kimchi (fermented — great for gut health), spinach namul (blanched spinach with sesame), kongnamul (bean sprouts — moderate carbs), and cucumber kimchi are all keto-compatible sides.
