The newest trend is pancake cereal, so why not make a Keto recipe version of it that is kid-friendly? A simple pancake batter made from almond flour, egg, mayo, and baking powder is mixed together. The mixture is easy enough for every day, especially if you prep the dried ingredients the night before. How to Make It

Step 1

Combine all ingredients together except the coconut oil, butter and syrup together in a bowl. Whisk together very well and set aside.

Preheat a large nonstick skillet over medium heat until hot. Add 2 tsp of coconut oil and swirl the pan. Drop the batter into very small pancakes all around the pan. Be sure to turn your heat down to the lowest setting while you are making the pancakes so they do not burn.

Step 3

Once you have filled the entire pan with small pancakes, begin flipping the first pancakes you made. Cook them for a few seconds on the second side. Remove them to a plate. Repeat with the remaining pancake batter, using the coconut oil to grease the pan between batches.

Step 4

Place pancakes into a bowl and top with butter and syrup!
