Peel and mince the garlic, finely chop the parsley and cilantro and slice the lime into wedges. In a large mixing bowl ,combine paprika, minced garlic cloves, finely chopped parsley, salt, pepper and olive oil. Whisk to combine.
Step 2
Add the chicken thighs and coat them with the mixture. Make sure they are all well coated before covering the bowl with cling film. Refrigerate them for at least 30 minutes before grilling.
Step 3
Grill on both sides until they are nice brown and cooked through. Garnish with fresh cilantro and lime wedges. Best served right away.
