Lay each 7-ounce steak between two sheets of plastic wrap and hammer with a meat mallet or rolling pin to about ¼ inch thick. Season generously on both sides.

Tear the basil leaves evenly between the two steaks.

Roughly chop the tomatoes into small chunks and arrange between the two steaks, covering just over one half of each steak only (leaving room to roll).

Tear the mozzarella and scatter over the tomatoes.

Roll the filled side of the steak over, keeping it tightly rolled until it overlaps with the other side, creating a neat tube. Secure each steak with two tooth picks.

Heat the olive oil in a large pan over a medium/high heat and add the steaks. Cook for 2-3 minutes on each side or until browned all over and cooked through to personal taste. Serve with a fresh dressed salad or steamed greens.
