Crack the eggs into a mixing bowl. Add the Italian seasoning, salt and garlic powder. Beat together to combine.
Add the grated mozzarella, and parmesan. Beat together until well combined. The seasonings should be well distributed throughout the beaten egg.
Heat the oil in a skillet over a medium heat. Pour the beaten egg mixture into the skillet, swirling to coat the base in a thin and even layer of egg. Cook the egg through completely until set. Flip the cooked tortilla onto a serving plate and roll or wrap around your preferred fillings.
