In a bowl, whisk together the egg yolks, warm water, and lemon juice. Then, transfer the whisked ingredients to a small pot.

Set the pot over a very low heat on the stove. Continually whisk the egg mixture while you heat the contents until you have a thick, pale yellow sauce that can hold streaks made by the whisk. If you overheat the sauce, the egg will cook and become chunky – you don’t want this!
Step 3
Take the pot off the heat immediately. Whisk in the butter, 1 tablespoon at a time. Then, whisk in the salt and paprika. Serve hot!
