Slice the halloumi into two even slices. Slice the bell pepper pieces in half and the zucchini into two even discs. Arrange across a sheet pan.

Mince the garlic and add to a small bowl along with the oil, basil, oregano, lemon juice, salt and pepper.

Drizzle the marinade over the cheese and vegetables and rub all over using your hands.
Step 5
Transfer to the oven to bake for 15 minutes until the cheese is golden and the vegetables are tender.
Step 6
Arrange two pieces of halloumi on a clean surface and layer each with one of the orange bell pepper slices, followed by the zucchini, remaining halloumi and top with the red bell pepper slices to serve.
