Carefully cut the halloumi into two even slices. Add the cheese to a dry skillet over a medium/high heat and fry for 2-3 minutes each side until golden brown. Set aside.
Step 2
Whilst the halloumi is cooking, finely dice the tomatoes and add to a small mixing bowl along with the onion and arugula. Toss to combine.
Step 3
Add the olive oil, lemon juice, salt and pepper and stir well.
