Heat a tablespoon of olive oil in a frying pan over a medium-high heat. Add the bacon and cook until crisp and golden on both sides.

Heat a griddle pan over a high heat. Slice the halloumi into two even slices and season with pepper. Add to the hot pan and cook for 2-3 minutes on each side until hot through and golden brown.
Step 3
To assemble the sandwich, arrange the lettuce on one slice of the halloumi. Layer with the cooked bacon, then add slices of the tomato.
Step 4
Top with the second halloumi slice to serve.
