Mince the garlic and add to a mixing bowl with the lamb chops, olive oil, zest, salt and pepper. Use your hands to rub the seasoning into the meat. Set aside for 10 minutes to marinade.
Step 2
Lightly oil a griddle pan over a medium/high heat. Add two of the lamb chops and cook until golden brown on one side – about 4/5 minutes. Turn and continue to griddle the second side until golden brown and the lamb is cooked through to taste. Repeat with the remaining chops.

Spoon a quarter of the salsa verde over each chop to serve.
