Add the olives, capers, lemon zest, and garlic to a food processor. Pulse to combine. The mixture should be broken down into small chunks.
Step 2
Add the fresh parsley to the food processor. Pulse again to combine. You may add more or less parsley to taste.
Step 3
Add the olive oil and lemon juice to the food processor. Blend again until well combined, and you have a chunky dressing. You may add more oil if you prefer a thinner, smoother consistency. Taste and add additional lemon juice if desired.
