Sweet, creamy and deliciously crunchy, these granola fudge bars are an indulgent treat. Packed with nuts, flax and dark chocolate and encased in almond butter and coconut oil, these high fat snacks are guaranteed to keep hunger at bay between meals.
How to Make It
Step 1
Line a small shallow dish or mould (approx. 7 x 4 inches) with baking paper.
Step 2
Add the ground almonds, flax, walnuts, pecans, chocolate, half the flaked almonds and salt to a mixing bowl. Stir well to combine.
Step 3
Add the coconut oil, xylitol and almond butter to a food processor and blend to form a completely smooth liquid.
Step 4
Pour the liquid mixture over the nut mixture and stir well to combine.
Step 5
Spoon the mixture evenly into the lined mould and scatter over the remaining flaked almonds, pressing down gently.
Step 6
Transfer to the freezer to set for 1-2 hours until firm.
Step 7
Once set, slice into 12 squares and store in an airtight container in the fridge
