How to Make It
Step 1
Preheat the oven to 400 degrees Fahrenheit.
Step 2
Arrange the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness – about 1/2 inch.
Step 3
Divide the tomato paste between the two chicken breasts. Spreading evenly across the surface.
Step 4
Sprinkle over the dried oregano and crumble over the goats cheese.
Step 5
Roughly chop the tomatoes and slice the olives, arrange over the top of the chicken breasts.
Step 6
Season with a little salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes to bake until the chicken is completely cooked through and the cheese has melted. Scatter with fresh basil to serve.
