Preheat an oven to 350 degrees. Trim and break up your cauliflower into florets and spread across a sheet pan coated with pan spray. Drizzle the olive oil all over the cauliflower.
Step 2
Bake the tray of cauliflower for 35 minutes, rotating the florets halfway through. Once done baking, transfer the cauliflower to a food processor with all remaining ingredients.
Step 3
Turn the food processor on and blend until you have a creamy mashed potato mixture. Use a spoon to scrape down the food processor as needed. This recipe was garnished with fresh chopped chives!
