In a bowl, whisk together the eggs and brown mustard with a fork. Set this aside.

In a second bowl, combine the parmesan, almond flour, salt, pepper, and paprika. Set this aside as well.
Step 3
If you need to, slice chicken breast into tenders. If your tenders are pre-cut, lay them flat and ready for cooking.
Step 4
*Heat the grapeseed oil in a large skillet on high heat. When the oil is hot, dip each chicken tender into the egg mixture first and then the dry mixture. Place the chicken strips in the skillet for frying. Cook each chicken strip for approximately 5 minutes per side. The tenders will naturally release from the pan when they’re cooked.
Step 5
Lay the cooked chicken strips on a paper towel to soak up any excess oil.
