Wash, rinse, and pat dry the strawberries, then cut them into quarters. To a small bowl, add the chopped strawberries with 1 tbsp powdered monkfruit. Stir to evenly coat the strawberries in the sweetener and set aside.

In a separate bowl, add the sour cream, cream cheese, 1 tbsp powdered monk fruit, vanilla extract, and ground cinnamon. Whisk to combine until the mixture is light and uniform. Taste and adjust the sweetness to your liking.

Start assembling the desserts. To small dessert glasses, add a layer of the cream at the bottom then top with some of the strawberries. Repeat alternating the layers of cream and strawberries until the jars are filled to the brim.

Serve immediately. Alternatively, cover the dessert cups individually with plastic wrap or place in an airtight container and refrigerate for 2-3 days. Feel free to top this dessert with your favorite Keto ice cream.
