Cut the chicken breasts into thinner pieces. Add one tablespoon of olive oil to a large pan and heat it up over medium heat. Add the fillets and cook for 3-4 minutes on each side. Remove the breasts from the pan and set them aside.
Peel and finely chop the onions. Add the onions to the same pan and cook for 4-5 minutes, stirring occasionally. The onions should be lightly golden and tender.
Add the salt, black pepper, thyme, and wine. Stir well. Continue to cook for 2 minutes.
