Roughly chop the chocolate and transfer it to a bowl. Add the cream and butter to a saucepan and place it over medium-low heat. Heat the mixture until the butter melts and the liquid reaches a simmer. Take the saucepan off the heat as soon as you see tiny bubbles forming.
Pour half the cream mixture over the chocolate and let it sit for 2-3 minutes. Using a spatula, gently stir in small circular movements to combine. If you still see chunks of unmelted chocolate – that’s fine.
Pour the remaining cream over the chocolate. Stir until you have a smooth, shiny chocolate mixture. Line a shallow baking dish with plastic wrap.
Pour the chocolate mixture into a baking dish and cover the surface with plastic wrap. The plastic should touch the surface of the chocolate mixture. Place in the freezer for about 2 hours.
