Add the almond milk to a small saucepan over low/medium heat. Add the almond extract and stir well to combine. Heat through until piping hot, but do not allow to boil.

Add your hot coffee to a large mug. Add the erythritol (if desired) and coconut oil. Stir well to combine, melting the oil into the coffee.
Step 3
Pour the hot almond milk into your coconut oil coffee. Carefully use a hand held stick blender to blitz the coffee, milk and oil together. Blend until smooth and creamy and you have a frothy layer on top. Serve immediately.
