How to Make It
Step 1
Add 3 eggs to a small saucepan and cover with water. Bring to a boil and let simmer for 8 minutes. Place the eggs in an ice bath for 2 minutes.
Step 2
Peel the eggs and place them on a cutting board. Cut into cubes and place in a bowl. Chop the dill and scallion and transfer them to the bowl. Add the mayonnaise, mustard, lemon juice, salt, and pepper and mix to combine.
Step 3
Cut the avocado in half lengthwise and remove the seed. Dollop the egg salad onto both avocado halves. Garnish with more dill and serve!
