It’s made with all-natural ingredients, including fresh strawberries, honey, lemon, and a hint of liquid stevia. All you need is lots of ice on hand to turn those ingredients into the perfect hot-weather dessert. If it’s not summertime, you can try making the recipe with frozen strawberries instead of fresh ones, but you won’t need as much ice. However, it’s best to make the recipe with fresh, in-season strawberries for a naturally sweet treat.
Start by removing the tops from the strawberries before you measure them and add them to a blender to get the most strawberries you can. Add honey, lemon juice, liquid stevia, and about just 1 cup of ice to the blender. Blend the ingredients until you have a really icy mixture, then add the remaining ice. Blend again until you have a smooth but really thick mixture.
Pour the mixture into a glass baking dish. Spread it out into a large dish to help it freeze quickly. Place the dish in your freezer for 30 minutes. After that time, take the dish out, and use a fork to scrape the strawberry ice into a slushy mixture.
Spread the slush out in the dish again and return it to your freezer. Freeze the strawberry ice for at least 1 more hour or until the center is firm. Before serving, you’ll use a fork again to scrape the ice into what will look like Italian ice. Scoop the strawberry Italian ice into cups for serving by the ounce.
