Cover four wooden kebab skewers with water to soak.

Cut the cauliflower into florets and add to a pan of boiling water. Boil for 3 minutes until just tender, drain and submerge immediately in ice cold water to stop the cooking process. Drain, pat dry and add to a mixing bowl.

Preheat the oven to 400 degrees Fahrenheit.

Add the tomato purée, oil, curry powder, cumin, coriander, lemon juice, turmeric, salt and pepper to a mixing bowl. Mix together well to combine.
Step 5
Add the tomato mixture to the cauliflower. Use your hands to rub the marinade all over the cauliflower.
Step 6
Divide the cauliflower evenly between the four kebab skewers.
Step 7
Bake for 20-25 minutes until fork tender and the edges are starting to caramelize.
