Use a vegetable peeler to peel away approx. 12 slices from a whole cucumber, totaling the weight listed in the ingredients. Overlap the slices of cucumber lengthwise to create a rectangular layer about 8-9 inches wide. Pat the cucumber dry with a paper towel.
Step 2
Cut your provolone slices into halves. Layer the provolone on top of the cucumber as pictured.
Step 3
Create 3 layers of whole slices of salami, capicola, and pepperoni. Arrange the slices as necessary to create an even layer of meat.
Step 4
Starting from the edge closest to you, roll up the cucumber tightly to create a long roll. This style is very similar to how you would roll sushi. Slice away the ends, if necessary, and cut the roll into 4 fat pieces. Enjoy right away!
