Wash, peel, and roughly dice the cucumber. Add to your blender’s pitcher along with the water, mint leaves and xylitol. Juice the lemons and add their yields to the blender.

Blend until you have a smooth liquid. Give this juice a taste and adjust the sweeteness if needed. You may also add more lemon juice if you prefare your lemonade sour.
Step 3
Place a fine cheesecloth over a large bowl. Pour the lemonade into the cheese cloth. Strain until a smooth, fiber-free juice remains.
Step 4
Transfer the lemonade to a clean pitcher or bottle. Chill, or serve immediately over ice. Garnish with a slice of lemon and cucumber.
