Make dinner time super easy with this crock pot Keto BBQ pulled chicken recipe. First, you’ll make a homemade tangy Carolina BBQ sauce. It’s mild, just a little sweet, and packs a punch for whatever you cook it with. Pour all the sauce into a crock pot with chicken breasts, then let the crock pot do the rest of the work. Once the chicken has cooked for long enough in the sauce, you can pull it apart with a pair of forks. Serve the pulled chicken as-is for Low Carb meal prepping, or make it a meal with buns, coleslaw, and your favorite sandwich toppings.
Combine your preferred brand of sugar-free ketchup in a large pot with dijon mustard, apple cider vinegar, chicken broth, Worcestershire sauce, and brown sugar substitute. Gently whisk the ingredients together and cover the pot with a lid. Heat the ingredients until they start to bubble.
Reduce the heat to a low setting and whisk the ingredients together again. Stir in salt, pepper, onion powder, garlic powder, and paprika. Taste the sauce and adjust the seasonings to your liking. If you want the sauce to be sweeter, you can add drops of liquid stevia.
