Preheat your oven to 450F/220C and line a baking sheet with parchment paper. Dry your cauliflower well and slice it in half, then slice those in half to create your steaks. Transfer to your baking sheet pan.
Mince the garlic and add it to a small bowl. Whisk in your olive oil, 2 tbs grated parmesan, paprika, chili flakes, and salt. Brush the steaks with this mixture ensuring to coat the front, back, and sides.
Add ½ cup of grated parmesan to a bowl. Dip one side of each steak into the freshly grated parmesan and place it parmesan side down on the sheet pan. Transfer to the oven.
Bake for 10 minutes, then drop the heat to 425F/210C and bake for 20 more minutes until the bottom is golden and crispy. Remove from the sheet pan and serve crispy side up.
