Finely slice the red onion. Heat the butter in a small pan and add the onion, sweating until tender.

Add the cranberries, cinnamon, cloves, erythritol, water, balsamic, salt and pepper.

Bring the mixture to a simmer, stirring well to combine. Continue to simmer over a gentle heat for 15 minutes, stirring often, until thickened and reduced to a chutney consistency. This will thicken further on standing.
