Finely chop the almonds and cashews. Add the almonds, cashews, sunflower seeds, pumpkin seeds, sesame seeds, shredded coconut, chia seeds, almond flour, and erythritol to a large bowl. Mix to combine.

Add the vanilla extract, cinnamon, and maple syrup. Mix well again. Taste and optionally add some more sweetener.

Preheat the oven to 150°C (300°F). Line a 28×20 cm baking tray with parchment paper. Melt the butter in a microwave. Press the mixture into the prepared pan. Lightly brush with butter and bake for 20 minutes. When done, remove from the oven and cool completely.
Step 4
Break into smaller pieces. Serve immediately or store for later. It pairs perfectly with maple-flavored syrup.
