Add the chia seeds, 1.5 tablespoons desiccated coconut, ground flaxseeds, 1 tablespoon ground cinnamon, and stevia. Stir to combine until the mixture begins to thicken. It should have a gel-like consistency.

Leave the chia porridge on the countertop for about 5 to 6 minutes. This will allow the chia seeds to absorb the liquid and swell up, giving the porridge its structure. Adjust the sweetness to your taste.
