How to Make It

Step 1

Preheat oven to 350F /180C and line a cookie sheet with parchment paper.. Add the walnuts and almonds to a food processor. Pulse a few times to chop them finely. Slice the cold butter.

Step 2

Add the almond flour, sliced cold butter, vanilla, powdered Low-Carb sweetener, egg, and salt to the food processor, then pulse until a moldable dough forms. Alternatively, you can use a hand or stand mixer, or even mix the dough by hand.

Step 3

Roll the dough into approximately 16 balls and place them in a shallow container. Freeze the balls for about 1 hour to prevent them from flattening when baking.

Step 4

Place frozen balls on a baking tray lined with parchment paper and place in the preheated oven. Bake for 10-15 minutes until lightly browned.

Step 5

Remove cookies from the oven and let them cool completely. Roll the cookies in powdered sweetener.

Step 6

Enjoy your cookies! Store the cookies in an air-tight container or in the fridge, or freeze for up to two months at least.
