Keto Christmas baking ideas can be fun for the entire family! This lovely Christmas pavlova is a dessert everybody will enjoy, whether they’re doing Keto or not. It’s a light and airy holiday treat perfect for the festive season. This Keto Christmas pavlova has a marshmallow-soft inside, and it’s amazingly crisp on the outside. It’s topped with tender whipped cream and decorated with your favorite low-carb berries.
Preparing a perfect pavlova is not difficult, but there are a few things to keep in mind. Adding the sweetener too quickly can cause your pavlova to deflate. Also, skipping lemon juice is another common mistake. A mild acid will give your pavlova its volume. You can replace it with cream of tartar (you will need ½ teaspoon for this recipe). Finally, beating the egg whites properly is crucial for perfect results. Not beating the eggs long enough or beating them on a low speed will give you a soggy mixture instead of the stiff peaks you want. Beating the whites for too long will also give you a grainy and dry consistency and will affect your pavlova.
Please note that the total preparation time includes the time needed to cool the meringue.

How to Make It

Step 1

Preheat the oven to 250°F (120C). Line a large baking tray with parchment paper. Using a hand mixer, beat the egg whites until stiff peaks form.

Step 2

Add the sweetener, one tablespoon at a time. Beat until mixed through and glossy. Add the cornstarch, lemon juice, and vanilla extract. Continue to beat for another 2 minutes.

Step 3

Transfer the meringue mixture onto the prepared baking tray. Push together into a circular shape. Bake for 90 minutes. When done, turn the oven off and keep the meringue inside to cool for one hour. Remove from the oven and cool completely. Cooling the meringue properly will prevent it from cracking.

Step 4

Meanwhile, beat the heavy cream and powdered sweetener until light and fluffy. Spread over the top of the meringue. Garnish with your favorite low-carb berries and serve.
