Add the ground almonds, coconut oil, almond butter, rum, cinnamon, ground ginger, salt and erythritol to a food processor. Blend together until well combined and smooth. You may use an alternative low carb sweetener if desired, adjusting the quantities accordingly to taste. You may also add more or less spices or rum to suit your preference.
Finely chop the cranberries. Spoon the festive rum mixture into a bowl and add in the cranberries. Stir them evenly throughout the mixture. Cover the mixture and place in the fridge for a few hours, or until firm enough to scoop with a spoon. You may make the mixture ahead and leave this to chill overnight if needed.
Scoop the chilled mixture into 16 even-sized portions. Roll each portion into a ball with your hands. If the mixture gets a bit soft when shaping, you can place in the freezer briefly to chill. Once shaped, store the rum balls in an airtight container in the fridge until ready to serve.
