Add the butter to a mixing bowl and bring to room temperature. Mash to soften.
Finely chop the fresh herbs and cranberries and add to the bowl with the butter, lemon zest, salt and pepper. Mix together well to combine.
Spoon the butter onto a sheet of plastic wrap and roll into a tight log shape, twisting the ends to secure.
Transfer to the fridge to firm until ready to serve.
