In a bowl, combine all the ingredients except for the avocado oil. Then, divide the mixture into 4 sections and flatten them into ½-inch thick discs.

In a shallow skillet, heat the avocado oil on medium-high heat. Then, place in the chorizo bites. Cook them in the oil for approx. 3 minutes per side, or until they become crispy and browned on the outsides.
