Use a sharp knife to cut a fat chorizo sausage link into several chunky pieces. Heat the first amount of olive oil in a pan over medium high heat and place in the sausage. Rotate and cook the sausage pieces until all the fat has drawn out and they become crispy on the outside. Set the chorizo aside to rest, leaving any excess fat in the pan.

Deglaze the pan over low heat with the second amount of olive oil. Crack two eggs into the oil and sprinkle the salt and pepper over them. Increase the heat as necessary to fry the eggs to your liking. These eggs were fried to a medium-easy. You may wish to leave your eggs on the easy side to dip your chorizo into the yolk.
