Heat a tablespoon of olive oil in a skillet over a low/medium heat. Crush the garlic and add to the pan along with the onion. Sweat gently until tender.

Roughly dice the chorizo and add to the pan, cooking until lightly golden and the chorizo begins to release its oil.
Step 3
Add the cauliflower rice and the remaining olive oil. Stir well to combine, coating the cauliflower rice in the oils.
Step 4
Add the spinach and stir into the pan so that it is just wilted.
Step 5
Make two wells in the mixture and crack one egg into each. Let the egg cook over a medium heat for a minute or two then cover the pan with a lid and continue to cook the egg to preference. Season with a little black pepper to serve.
