Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
Arrange the brazil nuts across the lined oven tray and transfer to the oven to bake for 8-10 minutes until fragrant.
Transfer the toasted brazil nuts to a food processor and blend to form a fine crumb.
Whilst the nuts are blending, melt the dark chocolate over a double boiler or in a microwave until you have a pourable liquid consistency.
Add the chocolate to the food processor with the brazil nuts along with the ginger, and salt. Blend to form a smooth and creamy butter.
