How to Make It
Step 1
Preheat an oven to 350 F. Combine the almond flour, whey, cocoa powder, sea salt, xanthan gum, baking powder, and powdered sweetener in a medium sized mixing bowl.
Step 2
Add in one stick of melted butter and one egg. Mix with a rubber spatula until well combined. Feel free to use your hands to knead the dough as well.
Step 3
Place the chocolate dough in between two parchment paper pieces and roll the dough to a β β thickness. The dough should not need to be chilled.
Step 4
Using a 1β round cookie cutter, cut out round cookies and place them on a baking sheet. Bake for 15-16 minutes until the cookies are well baked.
Step 5
Allow them to cool sufficiently before removing them from the baking sheet. Transfer them to an airtight container where they can keep for up to one week.
