Preheat an oven to 350 degrees. Mash the avocado with a fork in a mixing bowl until it’s free of lumps. Whisk the mashed avocado together with the eggs, stevia, and vanilla. Additionally, in a separate bowl, sift together the paleo flour, baking soda, salt, and cocoa powder.

Use a spatula to fold the dry ingredients into the avocado mixture. Fold over until you have a consistent batter. Pour the batter into a loaf pan lined with parchment paper and gently level it out. Bake the avocado bread for 40 minutes – until the top is dark brown and a toothpick comes out clean. Enjoy up to two slices of bread per sitting.
