Heat a heavy bottomed pan over medium-high heat until hot, add avocado oil. Swirl the pan with oil. Add minced garlic and stir briefly.

Add tofu and stir fry for 2-3 minutes until browned.
Step 5
Add celery (cut on a bias into thin strips) and stir fry again for 1-2 minutes until celery is still crispy, but not raw. Drizzle in tamari and sesame seed oil. Taste adding a pinch of salt if needed.
