Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper. Season the chicken wings with salt on both sides and place them on the prepared baking tray. Drizzle with two tablespoons of olive oil. Bake for 25 minutes or until fully cooked through and crispy on the outside.

Meanwhile, peel and roughly chop the avocado. In a medium bowl, add the avocado, Greek yogurt, fresh mint, garlic, and the remaining olive oil. Mix well to combine. Optionally, add some salt to taste or a few drops of lemon juice.

Serve the baked chicken wings with spinach and the avocado tzatziki. Garnish with some sliced tomatoes and fresh mint. Serve immediately.
