Thinly slice the onion, roughly tear the basil and dice the avocado. Add the arugula and basil to a large salad/serving bowl. Add the onion and avocado. Toss to combine.
Step 2
Roughly tear the cooked chicken and mozzarella and chop the sundried tomatoes. Add the chicken, mozzarella, and sundried tomatoes to the serving bowl. Season and toss everything together well to combine.
Step 3
Drizzle over the olive oil and lemon juice. Mix well to coat the salad in the dressing. Serve immediately.
