In a bowl, mix together all ingredients except for the avocado oil. Portion the mixture into 4 balls.
Step 2
Heat the avocado oil in a pan over medium-high heat (or half the oil if you’re cooking only 2 patties at a time). Place the chicken salad portions down in the pan and use a spatula to flatten the portions into patties.
Step 3
Cook the patties for approx. 4-5 minutes per side. Repeat steps 2-3 if necessary to complete cooking all chicken patties.
