These keto chicken nuggets are breaded with seasoned ground almonds to create a crisp and golden crumb.Perfect for families served with slaw or keto fries!

How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray with a little oil.

Step 2

Add the ground almonds, onion powder, salt and pepper to a mixing bowl. Finely chop the rosemary, add to the bowl and stir well to combine.

Step 3

Beat the egg in a large bowl, dice the chicken and add to the bowl, coating it in the egg.

Step 4

Tip the ground almond mixture out onto a clean surface or baking sheet. Drop the egg coated chicken pieces into the mixture, half a batch at a time and turn each piece until it is well breaded all over.

Step 5

Arrange the breaded chicken across the oven tray and bake for 18 minutes or until the chicken is completely cooked through and the coating is crisp and golden.

  • Boneless Skinless Chicken Breast – 1 pound
  • Rosemary, Fresh – 1 teaspoon
  • Raw Egg Whole – 1 medium
  • Onion Powder – ½ teaspoon
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
