This chicken stew can be made in under 1 hour and uses easily sourced ingredients. It is also a great meal prep recipe and tastes even better as it sits longer in your fridge.
Place the chicken in a hot skillet over medium heat. Season with a crack of pepper and salt. Cook for about 5 minutes on each side, then add ½ cup of chicken broth. Cover and cook for 7 minutes.
Transfer the chicken to a plate and shred it using 2 forks. Meanwhile, mince the garlic, and dice the onion and celery stalk. Roughly chop the spinach, cut the zucchini into half coins, and finely dice the tomatoes.
In a pot over medium heat, add 1 tablespoon of olive oil. Add the diced onion, celery, and garlic. Sauté until soft and fragrant.
Add in the diced tomatoes, 2 cups chicken broth, soy sauce, parsley, bay leaf, salt, pepper, and hot sauce. Stir to combine. Bring the mixture to a boil, then reduce it to a simmer. Cover and simmer for 20 minutes.
Remove the bay leaf, then add in the shredded chicken, spinach and zucchini. Stir to combine, cover, and cook on medium heat for an additional 15 minutes. To make the stew thicker, take about ½ cup of the stew, blend with an immersion blender and add it back to the pot. Stir to combine.
When you are ready to eat, serve in bowls. Garnish with fresh parsley and some hot sauce as per your preferred heat tolerance.
