Roughly chop the avocado and finely dice the tomato. Add to a mixing bowl along with the red onion, lime juice, chili flakes, salt and pepper. Mash together to form a chunky paste.

Divide the guacamole evenly between the four slices of chicken, creating a strip close to the edge.

Add the lettuce and divide between the four chicken pieces.

Scatter each with fresh cilantro.
